
Between late November/ early December, after ploughing, the Carpino Fava beans are manually thrown into the furrows. After a few months, the seeds begin to sprout to give birth to new fava beans plants.
The weeds are manually extirpated.
Towards the end of May the harvest is carried out. This step is also done manually as the pods are born very close to the root of the plant so a mechanical harvester could destroy most of the product.
The plants are then tied up into sheaves and left to dry in the fields.


In mid/late June an open space is prepared in the ground, called Arj, on which all the sheaves are placed and then crushed (weighing) to crush the now dry plants and the straw is removed with wooden forks.
This is followed by the ventilation phase which is carried out in the early afternoon as the breeze arrives from the lake: with the wooden shovel, the product is thrown in the air so the breeze carries away the chaff (dust) while the fava beans seeds fall onto the ground.
An initial rough cleaning is carried out in the field, then the good fava beans are collected and taken to the company where they are further selected and placed in steel containers until packaged.
The waste product is collected and used as feed for our sheep.
